This easy 4-Ingredient Low-Carb Keto Marzipan recipe is a 10-minute Keto Christmas Dessert Recipe with a delicious nutty fondant texture and only 1 gram of net carbs per serving! Bonus, this is an egg-free marzipan recipe, also suitable for vegan keto food lovers.

It’s almost Christmas and a great time to start preparing or testing some delicious keto dessert recipes to share with family and friends. As a French person, I used to buy logs of marzipan in store. It is a traditional almond flavored dessert that I used to love, plain or covered with chocolate.

But it’s also a high-carb and high-sugar treat, so here’s my sugar-free, low-carb version for you!

What’s marzipan?

Marzipan is a traditional German almond sweet dessert made of almond flour, almond extract, powdered sugar, and egg whites. It’s used in many different recipes like Marzipan cookies, marzipan chocolate, marzipan rose, or animals or on its own as a treat.

Is marzipan keto?

No, a traditional marzipan recipe contains a lot of added powdered sugar, and it’s therefore high in carbs.

How to make keto marzipan?

Luckily, it’s super easy to make a keto marzipan recipe at home.

Since I didn’t want to use raw egg whites in my marzipan, this recipe is also a keto vegan marzipan recipe.

Ingredients

All you need to make this sugar-free marzipan recipe are:

  • Ultra-fine blanched almond flour – the recipe works with almond meal, but the marzipan color won’t be as light and golden. Plus, the texture will be grainier, so I recommend finely ground almond flour instead.
  • Keto Powdered sweetener of choice – any powder keto sweetener like powdered erythritol or allulose works. Don’t use the granulated form, or the texture of the marzipan won’t be smooth.
  • Almond extract or rose water extract.
  • Water – the traditional recipe uses raw egg whites, which work well. However, water makes the recipe last longer, and it provides an option for keto vegan marzipan food lovers!

Blend

To make a smooth low-carb marzipan recipe, bring all the ingredients into a food processor, and using the S blade attachment, blend at high speed for about 1 minute.

Stop the food processor when the mixture starts to come together or be sticky enough to form a ball if squeezed in your hand.

How to make Keto Marzipan

Shape into a log

Transfer the marzipan dough onto a piece of parchment paper – this prevents the dough from sticking to your benchtop.

Slightly oil your hands and knead to gather the pieces of dough and form a ball.

Flatten the ball and turn it into a log shape.

Wrap the log into plastic film. Seal the plastic wrap very well on both sides and store 1 hour in the fridge to firm up.

Remove the marzipan from the plastic wrap, place it on a chopping board, and use a long sharp knife to cut it into slices of about 15 g each or 0.5 ounces per serving.

You can cut all the marzipan and once and store the slices in an airtight container in the fridge for up to 2 weeks.

You can also freeze the marzipan and thaw at room temperature a single serving just 30 minutes before eating it.

There are many ways to eat marzipan.

In Europe, most people enjoy a piece of marzipan as a snack. It’s a popular side to a cup of bulletproof tea or coffee latte in the afternoon.

Another option is to use this marzipan recipe to make my marzipan chocolate truffles recipe. These are perfect as a keto recipe to celebrate Christmas.

However, if you want to make marzipan almond-free, you can swap almond flour by some of the keto flours below:

  • Sunflower seed flour
  • Hazelnut flour to make hazelnut marzipan

Can I make marzipan without a food processor?

Most marzipan recipes, keto or not, use a food processor to create the smoothest melt-in-your-mouth almond fondant without grainy bites or almonds.

However, if you really crave this sweet treat and you don’t have a food processor, you can gather the ingredients in a bowl. The result won’t be as smooth, and it will probably fall apart and require more water.

What Can I Do If My Marzipan Is Dry?

It happens if your almond flour is coarse and soaks more liquid. To fix that, add more water to the food processor, one teaspoon at a time until the dough is soft, sticky, and easy to shape into a ball.

Can I freeze marzipan?

Absolutely yes! The best is to freeze single servings of marzipan so you can easily thaw one portion in 30 minutes at room temperature.

Can I dip the log in chocolate?

Yes, you can melt 100 grams of sugar-free chocolate chips with 1/2 teaspoon coconut oil in a saucepan over medium heat.

Then, remove the marzipan log from the fridge and pour the melted chocolate on top.

Place the dipped marzipan log on a rack to drain extra melted chocolate and pop in the freezer for a few minutes to quickly harden the chocolate shell.

These Keto Zucchini Pancakes are sweet breakfast pancakes with a fluffy texture and filled with fall spices and moist shredded zucchini.

They are a delicious Fall keto breakfast to sneak some greens into your plate with only 1.7 grams of net carb per serving. Bonus, these are also gluten-free!

I already shared with you my keto zucchini fritters, a savory zucchini pancake recipe also known as keto zucchini fritters, that I love to serve as a light dinner topped with sour green and herbs.

So now time for a sweet zucchini pancake recipe!

What are zucchini pancakes?

Zucchini pancakes are not keto zucchini fritters! A keto low-carb zucchini fritter recipe is fried in oil and savory, usually served as a light dinner, keto hash brown swap, or side dish.

However, keto pancakes with zucchinis are sweet, fluffy, cooked on a slightly oiled pancake griddle, and served with sugar-free maple syrup and pecans.

They are sweet pancakes with added zucchinis to add vitamins and nutrients to your keto breakfast while enjoying a sweet treat.

How to make zucchini pancakes?

Ingredients

  • Almond flour – don’t swap for coconut flour, or the pancakes will be extremely dry. Learn how to choose your keto flour.
  • Unsweetened almond milk
  • Eggs
  • Zucchinis – read my paragraph below to learn how to prepare zucchini. Is Zucchini Keto-friendly?
  • Baking soda or baking powder
  • Vanilla essence
  • Erythritol – or any other similar keto sweetener.
  • Cinnamon
  • Nutmeg
  • Melted coconut oil or melted butter – measured melted.
  • Olive oil to slightly oil the pancake griddle.
  • Xanthan gum – this ingredient helps the batter hold well together and makes the pancakes easier to flip without breaking apart. Also, you can replace xanthan gum with 1 teaspoon of psyllium husk.

Prepare the zucchini

Zucchinis are great low-carb vegetables. They are made at 95% of water and add many nutrients and vitamins to your keto diet.

But, to prevent zucchinis from releasing their water into a recipe, you must drain the shredded zucchinis first.

Start by trimming the end of the zucchinis, keeping the skin on because we don’t want to lose all their nutritional properties.

Next, shred the zucchinis in a food processor or using a hand grater. I recommend using the smaller attachment to shred zucchinis thinly.

Finally, wrap the shredded zucchinis in a clean kitchen towel or cheesecloth and twist to extract excess water from the zucchini.

You can also pat dry the zucchinis between two pieces of paper towel. It’s a less messy option as zucchinis tend to color your towel green!

Discard the water, or keep for a juice or soup.

Set aside the shredded, drained zucchinis in a bowl.

Making the batter with a blender

In the jug of a high-speed blender, add almond flour, eggs, almond milk, baking soda, vanilla extract, erythritol, cinnamon, nutmeg, xanthan gum, and melted coconut oil. Blend on high speed until the batter is smooth.

How to make Keto Zucchini Pancakes

Then, transfer the batter into a mixing bowl and stir in shredded zucchinis. At this point, you can also stir in some delicious adds-on, about 1/4 cup of:

  • Shredded coconut
  • Sugar-free chocolate chips
  • Chopped pecans

Set the batter aside for 10 minutes then it’s ready to cook in a pancake griddle.

Making the batter with no blender

If you don’t have a blender, you can combine all the ingredients into a mixing bowl.

Start by beating the liquid ingredients together. Then, stir in the dry ingredients and finally the shredded zucchinis.

The batter is a bit more grainy without a blender, so make sure you use ultra-fine almond flour to decrease this feeling.

Cooking

Warm a pancake griddle or crepe pan over medium heat. Slightly grease the surface with oil spray, and then add 2 tablespoons of batter per pancake.

Cook the pancakes gently on one side for 2-3 minutes or until the sides start to dry out and turn golden brown.

Then, slide a spatula under the pancake and flip on the other side to cook for 1-2 extra minutes.

Serving

Serve with a drizzle of sugar-free maple syrup and a few toasted pecans nuts. I like to also add:

  • Unsweetened whipped cream
  • A pinch of cinnamon
  • Shredded coconut

Gluten free Zucchini Pancakes

Storage

Store the cooked pancakes in the fridge in an airtight container for up to 3 days. Then, rewarm in a hot pancake griddle or a bread toaster.

Of course, you can also freeze these keto zucchini sweet pancakes for later. Thaw in the fridge before serving.

This is also a great recipe to make savory keto zucchini pancakes. To do so, skip the vanilla extract and sweetener.

Instead, add 2 tablespoons of chopped chives or green onions and a pinch of salt.

Other savory add-ons that you can add, up to 1/4 cup are:

  • Shredded cheese
  • Sundried tomatoes
  • Bacon bites

  • First, trim zucchini ends, keep their skin on, and shred with the thinner grating attachment of your food processor or hand box grater.

  • Place the shredded zucchinis in a kitchen towel, twist, and squeeze to remove excess water. Discard zucchini water. Measure 1/2 cup of shredded drained zucchinis and set aside in a bowl.

  • In the jug of a high-speed blender, add almond flour, baking soda, cinnamon, nutmeg, erythritol, xanthan gum, eggs, almond milk, melted coconut oil, and vanilla extract

  • Blend on high speed until all the ingredients are combined. Transfer batter into a mixing bowl and stir in the shredded, drained zucchinis. Set aside for 10 minutes to rest the batter.

  • Heat a large non-stick pancake pan or griddle over medium-high heat.

  • Spray olive oil onto the pan and then add 3 tablespoons batter onto the griddle for each pancake. Don’t add more than 3 tablespoons, or the pancakes will be difficult to flip and fragile.

  • Flip the pancakes over when the sides are set. It takes about 2 minutes. 

  •  Keep cooking on the other side until golden brown.

  • Serve with sugar-free flavored maple syrup, toasted pecans, a pinch of extra cinnamon.

  • Store in the fridge in an airtight container for up to 3 days. Rewarm on a pan, sandwich press, or in the toaster. They can be frozen in an airtight ziplock bag and defrosted in the toaster before serving.

I am a huge fan of cinnamon flavor, and when I don’t have time to make my keto snickerdoodle cookie, I go for this low-carb mug cake with almond flour instead!

It’s fluffy, spongy with a delicious cinnamon sugar-free topping! Irresistible for cinnamon lovers, so let me share how to make this simple almond flour mug cake.

How to make Snickerdoodle Keto Mug Cake?

All you need to make this Keto Cinnamon Mug cake are a few pantry ingredients and some basic kitchen tools.

Kitchen tools

You need:

  • A tall microwave-safe recipient. It can be a tall coffee mug of about 12 fl oz volume or a simple microwave-safe ramekin. The key is to use a tall recipient, or the mug cake won’t rise properly or totally overflow from the recipient.
  • A microwave. This is a microwave cake recipe, so you need a microwave or read below for an oven option that takes a little bit longer to bake.

So before you start, grease the recipient of choice with coconut oil. Set aside on the benchtop and prepare the ingredients.

You need the below ingredients to make a keto mug cake with a delicious snickerdoodle flavor.

  • Almond flour – I am using ultra-fine almond flour with a lovely golden color. Avoid any coarse almond meal that makes keto cakes gritty and grainy. If you prefer to use coconut flour, use my coconut flour mug cake recipe and add the cinnamon and cinnamon sugar to make this recipe flavor. Read my review of keto-friendly flours to learn how to choose them.
  • Erythritol or sweetener you love as soon as it’s a granulated keto sweetener like allulose or xylitol or just a pinch of stevia powder. Learn how to choose your keto sweeteners.
  • Ground cinnamon
  • Egg at room temperature
  • Unsweetened almond milk 
  • Baking soda – you can swap for baking powder by using 1/2 teaspoon of baking powder instead of 1/4 teaspoon of baking soda.
  • Cream of tartar – skip if you don’t have some at home, but this is what makes the difference between my classic cinnamon mug cake and this keto snickerdoodle cake in the microwave. In fact, cream of tartar is the magic addition to snickerdoodle cookies. It adds a particular flavor to the cookies that you will love in this mug cake.
  • Vanilla extract

First, combine the wet ingredients in a small mixing bowl. Beat the egg with almond milk and vanilla.

Then, stir in the dry ingredients: add the almond flour, baking soda, cinnamon, and cream of tartar.

Assembling the mug cake

To assemble the mug cake, start by adding about half of the cake batter into the mug cake container.

Then, add half the keto cinnamon sugar and top up with the remaining cake batter.

Finally, add the remaining keto sugar on top of the mug cake.

Microwave

Microwave the keto mug cake in the center of the microwave on 800W power for 90 seconds.

You know that the mug cake is cooked when it has raised to the top of the mug, and the top is dry. The center top of the mug cake should be dry if touch, bouncy, not wet, or too dry.

Microwave time tips

Always check the microwave power before microwaving a cake. Your microwave must be set on 900W power for this recipe. If it’s above 900W, reduce baking time to 60 seconds and increase by 10-second bursts until cooked through.

If your microwave produces less than 900W, increase the baking time after the recommended 90 seconds. Add 10 seconds extra at a time and check the texture. Stop microwaving when the top is set and the cake is set.

Healthy Snickerdoodle Mug Cake

Oven option

If you don’t have a microwave, you can bake this snickerdoodle almond flour mug cake. Use a 5-inch oven baking pan or any ceramic ramekin that is oven-friendly. Grease the mold with coconut oil and fill following the assembling tips above.

Bake at 350°F (180°C) until the cake is set and a pick inserted in the center of the snickerdoodle cake comes out clean. It can take 15 to 25 minutes, depending on the diameter of your mold. The wider, the faster it cakes, but the less it rises!

Mug Cake

  • In a small bowl, beat together egg, almond milk, vanilla extract, and erythritol.

  • Stir in almond flour, baking soda, cinnamon, and cream of tartar. Stir until a smooth batter forms, and feel free to increase the cinnamon to 3/4 teaspoon if you love a strong cinnamon flavor. In this case, the batter will turn darker than the picture.

  • Transfer about half of the mug cake batter into the coffee mug, then add half the keto cinnamon sugar and the remaining cake batter.

  • Bake for about 90 seconds in a microwave power 900W, in the center of the microwave.

  • Remove from the microwave and sprinkle leftover cinnamon sugar on top.

  • Cool it down for 1 minute before eating to avoid burning yourself, and let the topping slightly melt and flavor the top of the mug cake. Serve plain or with a dollop of unsweetened whipped cream if used.

Baking: if you don’t have a microwave, you can bake this keto mug cake in the oven at 180°C (350°F) for 15-20minutes in a tall recipient, or it won’t rise.

Ingredients

It’s very easy to adapt the authentic buffalo cauliflower recipe to make it low in carbs and keto-friendly. All you need to make these simple keto cauliflower bites are:

  • Head of cauliflower – measure 4 cups of small florets of about 1 1/2 inches each.
  • Almond flour – this is a great low-carb, gluten-free flour to coat food and make any fried or air-fried keto recipes like my keto nuggets.
  • Paprika
  • Garlic powder
  • Salt
  • Egg-whites – for a vegan keto option, see below in the post.
  • Heavy cream or soy cream or canned coconut cream for dairy-free options.
  • Hot sauce – most hot sauce brands are keto-friendly, look at the ingredient list on the bottle and make sure there’s no hidden sugar name listed on it.
  • Olive oil or melted butter.
  • Sugar-free maple syrup or powdered erythritol

First, line a baking sheet with parchment paper. Then, lightly oil the paper with olive oil. Set aside.

Meanwhile, preheat the oven to 400°F (200°C).

Almond flour coating

In a mixing bowl, whisk almond flour, paprika, garlic powder, salt, almond milk and set aside while preparing the cauliflower head.

In another bowl, beat egg white or prepare the egg replacement mixture suggested below in this recipe to make the keto vegan option.

Cut cauliflower into florets

First, place the cauliflower head on a chopping board and trim the outside leaves. Next, cut the cauliflower head into small florets of about 1 1/2 inches size each.

I don’t recommend washing the florets because the coating wouldn’t hold. Your florets must be dry before dipping them into the almond mixture.

I usually wash my cauliflower head just after buying, pat it dry with absorbent paper, and then store it in the fridge.

It means the cauliflower is clean and dry before it’s used in the recipe.

Coat florets

Next, use a fork to dip each cauliflower one by one onto the egg white mixture. Leave them above the bowl for a few seconds, so the excess batter drips back to the bowl.

Then, using another fork, roll the florets into the almond flour mixture. You can also place the florets in the bowl with the almond flour and sprinkle some of the mix on top of the florets.

You don’t have to fully cover the florets.

How to make Keto Buffalo Cauliflower

Use a clean, dry fork to transfer the coated cauliflower floret onto the baking rack, following the instructions below.

Bag coating technique

A faster way to coat the cauliflower florets is to place the almond flour mixture into a large bag.

Then, place the cauliflower bites covered with egg white in the bag and shake vigorously to coat.

It’s a faster technique that doesn’t cover the bites very well and creates more waste – a lot of almond/egg white lumps at the bottom of the bag.

Lay on a baking sheet

These keto cauliflower florets can be slightly mushy if directly baked on a baking sheet covered with parchment paper.

It doesn’t mean you can’t bake them directedly on the baking sheet, but for better texture and crispiness, I recommend placing each coated floret onto a cooling rack placed on top of your baking tray.

Place each floret on the rack, making sure they don’t stick to each other, or they won’t roast properly.

Bake for 20 minutes in preheated oven or until crispy and half baked.

Hot sauce

While the cauliflower is baking, prepare the hot sauce mixture.

In a large bowl, whisk hot sauce, olive oil, and sugar-free maple syrup.

If you don’t have sugar-free syrup, any keto sweetener in a powder form will work very well, including erythritol or allulose.

Coat the cooked florets with hot sauce

Now that the cauliflower is halfway cooked, remove the tray from the oven, and using a pastry brush, brush each floret with the sauce.Keto Buffalo Cauliflower

Return to the oven for 20 minutes or until cooked through

Serving ideas

You can serve cauliflower florets as a side dish to any grilled meat, fish, or roast.

But it’s also a fun keto snack or keto appetizer recipe to share with friends and family. You can serve these keto buffalo cauliflower bites with a similar dip as you use for chicken wings, including some of my keto dip recipes below:

Storage

These keto cauliflower bites store very well in an airtight container in the fridge for up to 4 days. However, to enjoy their best texture and avoid a mushy outside, you must rewarm the bites in your oven instead of the microwave.

You can also freeze batches of cauliflower bites in zip bags or boxes and thaw them in the fridge the day before serving.

Can I air fry the cauliflower bites?

You can use this recipe in an air fryer. However, it takes a little more time because the air fryer basket is smaller than a large oven baking sheet.

So you will have to proceed in batches until all 4 cups of cauliflower florets are roasted.

Can I make this recipe egg-free?

If you are looking for a plant-based version of these keto buffalo cauliflower bites, I have got you covered!

It’s very easy to make this recipe without eggs. To do so, replace the egg whites with 2/3 cup of lukewarm water and 2 tablespoons of flaxseed meal, and replace the cream with soy cream or coconut cream.

Combine the three ingredients and wait 10 minutes for the texture to thicken. Then, dip the cauliflower florets into the egg replacement mixture first.

Then, dip into the almond flour and place them on the baking tray as for the regular recipe. This option makes delicious vegan buffalo cauliflower bites low in carbs and egg-free.

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. Place a cooling rack on top of the baking sheet and lightly oil rack with oil spray. Set aside.

  • In a large bowl, whisk together almond flour, paprika, garlic powder, salt, and pepper. Set aside.

  • In another bowl, beat egg whites and heavy cream until well combined. Set aside.

  • Trim cauliflower feet and leaves, discard. Cut the cauliflower into bite-sized florets about 1 1/2 inches.

  • To coat the florets – see my picture above in this post for visual help – or follow the directions below. Start by dipping one cauliflower floret into the egg white batter, leave it for a few seconds above the bowl to remove the excess egg white. Then, press in the bowl with almond flour mixture. Use clean, dry fingers to sprinkle some almond flour mixture to coat the other side of the florets. Use a clean fork to transfer from the almond flour bowl to the baking rack. Don’t touch the almond flour mixture with wet fingers or forks as it would form lumps.

  • Lay the coated florets on the prepared baking rack. Bake for 20 minutes.

  • Meanwhile, in a small bowl combine hot sauce, olive oil, and sweetener.

  • Remove the baking sheet from the oven, and brush each cauliflower bite with the hot sauce mixture using a pastry brush.

  • Return the tray to the oven for another 20 minutes.

  • Enjoy hot!

Cut and steam cauliflower

First, place the cauliflower head on a chopping board and trim outside leaves. Next, cut the head into small florets, bite-size of about 1 1/2 inches each.

Finally, place the florets into a steamer basket over a large saucepan of boiled water. Steam the florets for about 8 minutes.

You can also place the florets into a large mixing bowl and microwave for 6-8minutes until softer, not mushy. Set aside the cooked cauliflower for a few minutes or until they have steamed out.

Meanwhile, in a saucepan, melt butter, then add almond milk, and bring to a light boil. Then, whisk in softened cream cheese, Dijon mustard, garlic powder, paprika, salt, and pepper.

When the mixture is smooth, stir in 1 cup of each variety of shredded cheese. Keep cooking until the sauce is creamy and cheese is melted.

Finally, stir in the cooked cauliflower florets into the sauce and keep cooking for a few minutes until the cauliflower is well coated and flavored by the sauce.

Casserole option

To turn this Keto Mac and Cheese Cauliflower recipe into a casserole, place the cheesy cauliflower florets onto a large 9×13-inch baking dish.

Sprinkle extra 1 cup cheese on top of the casserole with 1/2 cup bacon bits and bake for 10 minutes or until the cheese is melted and grilled.

  • Trim the cauliflower stems, remove the leaves, then break into small bite-size florets about 1 1/2 inches wide.

  • Place the florets into a steamer basket and steam for 8 minutes until fork tender.

  • Cool down on a colander for few minutes until completely steamed out, then transfer to a large baking dish and spread into an even single layer.

  • Meanwhile, prepare the mac and cheese sauce.

  • In a large saucepan – large enough to fit the cauliflower florets – add the butter and almond milk and bring to a light boil, then whisk in cubes of softened cream cheese, Dijon mustard, garlic powder, paprika, salt, and pepper.

These keto sausage balls are cheesy and juicy on the inside, and use simple ingredients! No Bisquick and no flour needed, they are low in carbs but full of flavor and ready in 10 minutes!

When it comes to delicious keto appetizers, my favorite recipes to make are fluffy biscuits, spinach artichoke dip, and these easy keto sausage balls.

I definitely take after my mom when it comes to entertaining. I LOVE having friends and family over for dinners and parties and always ensure my guests are very well fed. This means that I spend the day before preparing a bunch of appetizers, entrees, and desserts.

While entrees are easy (I alternate between crack chicken and zucchini lasagna) and so are desserts (always brownies or a chocolate cheesecake), I tend to struggle with appetizers. See, my friends have this perception that keto appetizers are non-existent. They reckon besides a charcuterie board, options are limited.

That is FAR from the truth and actually, keto appetizers are some of the most delicious out there. I always have a few options for everyone (including the charcuterie board!) and my go-to recently, have been sausage balls!

This keto sausage ball recipe is the kind of recipe you’d make your non-keto friends to knock their socks off. It’s the kind of dish you can easily find a second stomach for and one you’ll be fighting others to eat the last one. Now, these sausage balls are a little bit different than mainstream ones, as it is made without Bisquick.

No Bisquik and no grains are needed, but you’d never tell. They are soft and juicy in the middle and have a lovely tender exterior. They are cheesy and flavorful and with a hint of sweetness, without being overpowering.

I made these delicious sausage balls for a recent birthday event and everyone was OBSESSED with it- Everyone begged me for the recipe after!

How do you make keto sausage balls?

The Ingredients

  • Ground pork– While any ground meat can be used, ground pork is what is most commonly used in sausages. You can use ground sausage, too. I used lean ground pork as there are plenty of wet ingredients to keep the sausage balls juicy.
  • Almond flour– Either blanched almond flour or superfine almond flour. If you’d like more tender sausage balls, you can even use keto bread crumbs.
  • Baking powder– Adds structure and helps bind everything together.
  • Cheddar cheese– Finely shredded cheese.
  • Cream cheese– Full fat cream cheese.
  • Sugar free maple syrup– Skip the expensive store bought kind and make your own keto syrup!
  • Milk– Any milk works.
  • Onion powder– Adds a subtle onion flavor without needing any onions (and keeping the carbs down!).
  • Salt and pepper– To taste.
  • Green onions– Adds a subtle peppery kick.

The Instructions

Start by adding all the ingredients, except for the green onions into a food processor and pulse several times until all the ingredients are incorporated. Add the green onions and pulse once more.

Next, use a mini cookie scoop or ice cream scoop to neatly scoop out portions of the mixture, then use your hands to shape them into balls. Place them on a lined baking sheet.

Finally, bake the sausage balls for 8-10 minutes, until they reach an internal temperature of 160C or higher. Remove them from the oven and serve immediately.

Can I make these in the air fryer?

If you own an air fryer, easily make air fried sausage balls.

Simply prepare the recipe as instructed and when they are ready to cook, lightly grease an air fryer basket and place the sausage balls at the base in a single layer. Air fry at 200C/400F for 8 minutes, flipping halfway through. Repeat the process until all the sausage balls are cooked.

Tips to make the best recipe

  • Do not overbake the sausage balls as they are are prone to drying out. Once they reach an internal temperature of 160C and some are mostly tender on the outside, they are ready to be removed from the oven.
  • Freshly grate your cheddar cheese instead of the pre-shredded kind. This will keep the sausage balls juicy and cheesy throughout.
  • I add some keto maple syrup because I LOVE the maple sausage combination, but feel free to omit this completely.

Storing, freezing, and reheating low carb sausage balls

  • To store: Sausage balls will keep in the refrigerator, covered, for up to 5 days.
  • To freeze: Place leftover sausage balls in a ziplock bag and store them in the freezer for up to 6 months.
  • Reheating: Either microwave them in 20-second spurts until warm, in a preheated oven, or in the air fryer.

What to serve with sausage balls

Condiments are the key sidekick for these sausage balls. Some of my favorite keto condiments include ketchup, bbq sauce, honey mustard, mayonnaise, and even ranch dressing.

  • Using a small cookie or ice cream scoop, scoop out equal size portions of the sausage ball mixture. Use your hands to shape them into balls and place them on the lined baking sheet.

  • Bake the sausage balls for 7-10 minutes, or until it reaches an internal temperature of 160C.

  • Remove the sausage balls from the oven and serve immediately.

Is Banana Keto-friendly?

No, bananas are not keto-friendly fruits. In fact, 100 grams of mashed banana contains 20 grams of net carbs, so if your daily carb macros are around 25 grams, it’s hard to eat a whole banana and stay in that range.

However, it’s possible to use a small amount of banana to flavor baked goods and keep the recipe low-carb and keto-friendly.

So you can make keto banana muffins with almond flour if you keep the amount of banana in control. Let me share with you my recipe to make a low-carb banana muffin with only 5.5 grams of net carbs!

Gluten free banana muffins

Ingredients

All you need are:

  • Ultra-fine Almond Flour – this is the best to make golden, moist almond flour banana muffins. Almond meal works as well, but it adds a grainy texture and darker color to the recipe.
  • Salt
  • Baking Powder or use 1 teaspoon of baking soda instead.
  • Cinnamon
  • Mashed Bananas – the best are ripe bananas to add lots of banana flavor and avoid adding any sweetener in the recipe.
  • Large Eggs at room temperature – this recipe doesn’t work with flax eggs or egg replacer.
  • Coconut Oil or melted butter
  • Vanilla Extract
  • Stevia Drops or 1/3 cup of granulated sweetener of choice, like erythritol or coconut sugar if you are making paleo banana muffins. Of course, adding sweetener is optional here, only if you like your healthy banana muffins on the sweet side. To avoid adding carbs, sugar, and calories to the recipe, opt for erythritol or allulose. Both are keto-friendly sweeteners.

Making The Muffin Batter

First, prepare the mashed bananas. Peel your ripe bananas and mash with a fork on a chopping board. It’s ok if you have bites of bananas. This adds moisture to the muffins.

Measure 3/4 cup and place in a mixing bowl with eggs, coconut oil, vanilla extract, and stevia drops or granulated sweetener, if used.

Whisk to combine all ingredients.

How to make Almond Flour Banana Muffins

Now, stir in the dry ingredients: almond flour, salt, cinnamon, and baking powder.

The batter should be thick, look slightly grainy, and that’s normal

Baking the Muffins

Preheat your oven to 350°F (180°C). Line a 12-hole muffin pan with paper cases and use an oil spray to lightly oil each muffin case. This prevents the almond flour muffins from sticking to the paper as they cool down.

Fill each paper case with about 1/4 cup of almond muffin batter.

Sprinkle some sliced almonds on top of each muffin if you like.

Bake in the center rack of the oven for 25-30 minutes or until a pick inserted in the center of the muffins comes out clean and the top is golden brown.

Release each banana muffin from the muffin tins and cool down immediately on a wire rack.

Storage

These banana almond flour muffins store very well in the fridge for up to 4 days.

Of course, you can freeze almond flour muffins in an airtight container and thaw them the day before at room temperature.

Can I Swap the Flour?

Yes.  For a nut-free option, use sesame flour or pumpkin seed flour.

However, you can’t replace the almond flour with coconut flour in this recipe.

Both are very different low-carb flours, but coconut flour absorbs 4 times more liquid, and the ratio of eggs will be different with coconut flour.

Can I Make The Muffins Coconut-free?

You can replace the coconut oil with melted butter or almond oil.

Can I Make Them Sweetener?

To boost the muffins’ sweetness, add 1/3 cup of granulated or liquid sweetener like maple syrup to the batter.

If you are on a keto diet, use sugar-free maple syrup or erythritol.

Can I blend the batter?

I don’t recommend blending the batter. It makes the muffins dense and dry.

Can I skip the banana to reduce carbs?

Absolutely, but you will need an extra 1/3 cup of almond milk to balance the moisture and add 2 teaspoons of natural banana extract to add some banana flavor.

  • Preheat oven to 350°F (180°C). Line a 12-hole muffin tray with paper cases. Slightly oil the paper cases with oil spray. Set aside.

  • Peel, mash the ripe bananas on a chopping board with a fork. It’s ok if there are bits of banana left. It adds moisture to the muffins. Measure 3/4 cup and place it in a mixing bowl.

  • In the same mixing bowl, add eggs, vanilla extract, and melted coconut oil – make sure the oil is not too hot, or it can ‘cook’ the eggs. Add the stevia drops or granulated sweetener if you want to boost the sweetness of the muffins (read note 1). Whisk until the eggs are well beaten and a consistent liquid batter forms.

  • Stir in the dry ingredients into the wet ingredients using a spoon to gently incorporate: almond flour, salt, baking powder, and cinnamon. The batter should be thick, moist, and look slightly grainy.

  • Fill each muffin cup with about 1/4 cup of batter, smoothen the top with the back of a spoon and sprinkle sliced almond on top of each muffin.

  • Bake the muffins on the center rack of your oven for 20-25 minutes or until golden brown and a pick inserted in the center of the muffins comes out clean.

  • Cool the muffins down on a wire rack for a few hours before serving.

Note 1: The net carbs per serving won’t change if you add the stevia drops of 1/3 cup granulated erythritol in the batter. Add only if you want a boost of sweetness or if your bananas are not ripe enough.

It’s super easy to make cornbread with almond flour. All you need are 6 ingredients.

  • Ultra-fine blanched Almond flour – almond meal works as well and provides an even closer texture to cornbread as it’s a coarse almond ground. However, the color of the cornbread won’t be as golden.
  • Large eggs – this recipe doesn’t work with egg replacer or flax eggs.
  • Baking powder – or use only 1  teaspoon of baking soda.
  • Melted butter – for dairy-free options, you can use light olive oil or melted coconut oil.
  • Granulated sweetener of choice – I am using erythritol, my favorite keto sweetener in baking, to make this a 100%  sugar-free cornbread!
  • Sweet corn extract – the magic natural ingredient that adds a corn flavor to your low-carb cornbread without adding any carbs!

When the mixture is consistent and well beaten, stir in the dry ingredients: almond flour and baking powder. If you want to add the optional yellow cornmeal, stir it now.

The batter should be consistent, thick, grainy, and yellow.

Transfer into an 8-inch x 8-inch baking dish covered with parchment paper that you lightly oiled with oil spray.

Bake on the center rack of the oven for 20-30 minutes or until golden brown and set in the middle. Insert a pick in the center of the gluten-free cornbread. If it comes out clean, it is cooked through.

These keto stuffed peppers are a quick, easy, and healthy dinner recipe that comes together in less than 20 minutes! Filled with ground beef, cauliflower rice, and topped with melted cheese, everyone will beg for seconds!

When it comes to keto ground beef recipes, my favorites to make are meatballs, meatloaf, and these easy stuffed peppers.

Are peppers okay on keto?

Bell peppers are a fantastic keto friendly vegetable to include on a low carb diet. Per 1 cup serving (150 grams) yields a mere 38 calories, 5 grams of fiber, and a mere 3 grams net carbs.

There are some who say the colors change the carb count, but they are incredibly negligible. Regardless, the bell peppers play a star role in these stuffed peppers!

These keto stuffed peppers recipe is one you’ll make on a weekly basis. Tender and juicy peppers filled with a Mexican-inspired beef and cauliflower mixture, topped with plenty of cheese. It’s the kind of dinner that comes together in minutes and something the whole family will love, keto or not.

What I love about this recipe is just how customizable they are. You can literally fill the peppers with anything and everything. Whenever I have leftover spaghetti sauce or even alfredo sauce, I love adding it to some peppers, sprinkling some cheese, and voila- Instant dinner.

How do you make keto stuffed peppers?

The Ingredients

  • Bell peppers– Green, yellow, red, or a combination of the three. Try to choose equal sized ones so they all cook evenly.
  • Olive oil– To sauteed the fillin.
  • Onion– Finely chopped.
  • Ground beef– Lean ground beef is preferred, as it keeps the overall recipe lower in fat and reduces the excess moisture that higher fat cuts of ground beef tends to have excess carbs.
  • Taco seasoning– To give this dish a Mexican spin, I love adding some homemade taco seasoning.
  • Canned diced tomatoes– No added salt or sugar canned tomatoes in their natural juices.
  • Cauliflower rice– Steamed until tender. This not only adds extra nutrients but helps bulk out the filling without needing excess carbs.
  • Cheese– Half will be mixed into the filling and half with be baked on top. I used a Mexican cheese blend but any full flavored cheese will work.

The Instructions

Start by slicing the peppers in half and removing the stems and innards. Place them in a large baking dish and set them aside. Next, prepare the filling. Add the oil into a non-stick pan and add the ground beef and onion. Cook until the beef is no longer pink. Drain excess liquid then add the taco seasoning, followed by the canned tomatoes. Let it simmer for 1-2 minutes. Remove the pan from the heat and stir through the steamed cauliflower rice, along with half the shredded cheese.

Now, distribute the filling amongst the halved peppers and sprinkle the remaining cheese on top. Place the stuffed peppers in the oven and bake for 30-35 minutes until tender and the cheese has melted.

How to make keto stuffed peppers

Air fryer and instant pot instructions

Easily make this dish in the air fryer or instant pot, if you own either of them.

  • Air fryer stuffed peppers– Place the prepared stuffed peppers in an air fryer basket and cook at 200C/400F for 10 minutes, turning halfway through.
  • Instant pot stuffed peppers– Place the trivet into the instant pot, then add the filled peppers, minus the cheese topping. Cook on high for 10 minutes, covered. Remove the lid, add the cheese, and place the lid back on top. Let the peppers sit for five minutes, or until the cheese has melted.

Tips to make the best recipe

  • Remove any excess liquid from the cauliflower rice mixture before adding it into the hollowed out peppers. This will ensure the filling remains fluffy and tender, instead of soggy.
  • The larger the peppers, the easier they will be to fill. Try and find the largest ones possible, so you won’t be left with excess cauliflower fried rice. 
  • Do not overbake them as we want the peppers to be soft yet still tender.

Dietary swaps and flavor variations

  • Make it vegetarian. Swap out the ground beef for equal amounts of chopped mushrooms, eggplant, or other vegetables.
  • Make it vegan. Replace the meat with vegan ground beef (like Beyond meat) and the cheese with vegan shredded cheese.
  • Switch the meat. Enjoy turkey stuffed peppers or chicken stuffed peppers by replacing the ground beef with ground turkey or ground chicken, respectively.
  • Cheesesteak stuffed peppers. Fill the peppers with homemade Philly cheesesteak.
  • Buffalo chicken stuffed peppers. Fill the peppers with shredded buffalo chicken.

Storing, freezing, reheating and make ahead instructions

  • To store: Leftovers should be stored in the refrigerator, completely covered or in a sealed container. Some moisture will begin to form, but that can be removed when you reheat it. They will keep well for up to 5 days
  • To freeze: Place cooled stuffed peppers in an airtight container and store them in the freezer for up to 6 months.
  • Reheating: Microwave them for 30-40 second spurts or reheat in a preheated oven until warm.
  • To make ahead: Prepare everything as instructed then cover the baking dish with aluminum foil (tin foil). Place it in the freezer for up to 1 month. When ready to cook, remove from the oven and bring it to room temperature, then cook as instructed.

What to serve with keto stuffed capsicums

This is the kind of dish that goes SO well with vegetable or low carb bread. My favorites include onion rings, keto French fries, coleslaw, cornbread, rolls, buns, and biscuits.

  • Preheat the oven to 190C/375F. Lightly grease a large baking dish.

  • Slice the tops of the bell peppers off, and de-seed them, and remove excess membranes. Slice each bell pepper in half and place them in the lined dish.

  • In a large non-stick pan, heat up your olive oil on medium. When hot, add your onions and sautee for around one minute. Add your ground beef and cook until no longer pink. Add the taco seasoning then pour in the can of diced tomatoes along with the juices. Let simmer for 1 minute.

  • Remove the pan from the heat. Stir in the steamed cauliflower rice and one cup of shredded cheese.

  • Evenly distribute the filling amongst the bell pepper halves and top with remaining cheese.

  • Bake the stuffed peppers for 20-25 minutes, until the cheese is melted and the bell peppers are tender.

  • Remove the stuffed peppers from the oven and serve immediately.

Then, freeze the balls for 5 minutes. This makes it easier to coat the marzipan with melted chocolate.

Melting the chocolate

To melt the chocolate, you can either use a microwave or the double boiler method.

Microwave method

Add the sugar-free chocolate chips with coconut oil to a microwave-safe bowl.

Microwave by 30-second bursts and stir between, repeating this until the chocolate is fully melted, smooth and shiny.

Double boiler method

Another option, my favorite, is to melt the chocolate using a double boiler. Boil water in a saucepan, remove from the heat and set it aside on a wooden board.

Place the glass mixing bowl containing the chocolate chips and coconut oil over the saucepan, making sure the bottom of the mixing bowl touches the hot water.

Stir until the chocolate is fully melted. That’s the best way to melt chocolate and keep its shine!

Remove the marzipan balls from the freezer.

Using a fork, dip the ball of marzipan into the melted chocolate and stay a few seconds above the bowl of melted chocolate to remove the excess chocolate from the truffle.

Finally, place the chocolate-coated marzipan truffles on the plate with oiled parchment paper.

Repeat these steps until all the marzipan balls are coated with melted chocolate.

Decorate

Obviously, this is optional to decorate the truffles, but so much more attractive, and it brings out the best of the holiday spirit to your dessert table.

My recommendation to keep things healthy and tasty is to  add a pinch of:

  • Christmas Sprinkles – you can find keto sugar-free sprinkles online.
  • A pinch of sea salt flakes.
  • Chopped nuts like pecans or almonds.
  • Shredded coconut – looks like snow and taste amazing with almonds.
  • A drizzle of white chocolate.

Place the plate with the covered truffles in the fridge for 5-8 minutes or 30 minutes in the fridge, until the chocolate shell sets.

You can set the shell at room temperature if it’s not too hot in your house, but it takes about 12 hours or overnight.

Absolutely! You can shape this marzipan as bars and make single-serve dark chocolate marzipan bars.

Can I Make Them Ahead?

You can make ahead your marzipan chocolate balls and store them in a sealed container in the fridge or on a plate wrapped with plastic wrap for up to 1 week. Another option is to freeze the almond truffles and thaw them the day before in the fridge.

Simply keep in mind that chocolate-coated truffles lose their shine after a few days in the fridge.

  • Cover a plate with parchment paper. Slightly oil the paper with coconut oil. Set aside.

  • Make a batch of marzipan following my recipe.
  • When the marzipan log is ready, divide the marzipan into 16 balls of the same size and roll each ball between your hands to form smooth balls of marzipan.

  • Place each ball on the prepared plate and freeze for 5 minutes to set.

  • Meanwhile, melt the chocolate using the double boiler method. To do so, boil water in a saucepan. When the water is boiling, remove the saucepan from the heat and place it on a wooden chopping board.

  • In a large glass mixing bowl, place the sugar-free chocolate chips and coconut oil.

  • Place the glass bowl over the hot pot of water and stir the chocolate with a wooden or silicone spatula until it’s fully melted and shiny.

  • Place the bowl with melted chocolate away from the hot pot and bring the plate with marzipan balls next to it.

  • Use a fork to dip each marzipan balls into the melted chocolate, stay a few seconds above the bowl of melted chocolate to remove excess chocolate, then place the dipped ball back to the plate covered with parchment paper.

  • Repeat until all truffles are coated.

  • Sprinkle some chopped nuts, sprinkles, a pinch of sea salt flakes on top of the truffle to decorate them.

  • Freeze again for 5 minutes for an ultra-quick set of the chocolate shell, or place 30 minutes in the fridge.

  • Store in an airtight container in the fridge for up to 1 week or freeze up to 3 months and thaw in the fridge the day before.
