An easy 3-ingredient Keto Rice recipe to fix all your rice cravings and serve as a keto side dish to Keto Chicken Curry or based in your Keto Poke Bowl.

Bonus, this rice alternative recipe doesn’t use konjac rice or low-carb rice substitutes like shirataki rice! All you need is a cauliflower head!

Is rice keto-friendly?

No, rice is one of the highest-carb grains, and like wheat, it turns into glucose very quickly into your bloodstream.

So you can’t eat rice on a keto diet. In fact, eating rice, even the healthier kind of rice like brown rice, would spike blood sugar levels and take you out of ketosis in an instant.

How to make keto rice?

There are three ways of enjoying rice on your keto diet.

The first two rice substitutes consist of using low-carb keto rice substitutes:

  • Konjac rice – or “miracle rice”, made from the Konjac Roots. Popular in konjac noodles.
  • Shirataki rice – also made from the Konjac Roots, but with a slightly different method

Both of these are almost zero-carb foods and very low in calories. They are my favorite in my vegan keto meal plan to keep carbs low and boost weight loss.

But there are some downsides with these:

  • Fishy taste – even if you wash, boil or rinse them with acidic food like vinegar or lemon juice, it’s hard to get away at 100% of their fishy smell and taste.
  • Price – not everyone can afford rice substitutes.

So to me, the best option to make keto rice at home is to use riced cauliflower cooked in a good amount of coconut oil or butter.

Keto Rice Ingredients

The ingredients you need to make keto rice that doesn’t taste like fish are:

  • Head of cauliflower – Cauliflower is a low-carb vegetable with only 1.7 grams of net carbs per 100 grams. It’s one of the best veggies on your keto diet.
  • Butter – or coconut oil, MCT oil, olive oil, or ghee. Butter is one of the keto-friendly dairy products.
  • Lime juice 

Can I use Broccoli instead of Cauliflower?

Yes, but the texture is quite different. Broccoli is also slightly higher in carbs, lower in fiber, and because it’s green, it doesn’t quite replace white rice in your head when you eat it.

Step 1: Turning Cauliflower into Rice

First, trim the head of cauliflower by removing its feet and large green leaves. Discard these parts in your compost, for example.

Then, cut the cauliflower into small florets and place about 2 cups of florets in your food processor.

Using the S blade attachment, process the cauliflower florets at high speed for about 30 seconds or until they turn into a rice-like texture. You can also use a box grater or grate manually, but it takes a lot more time!

Set aside in a large bowl, then repeat with the remaining cauliflower florets.

Never add more than 2 cups of fresh cauliflower florets to the food processor, or it becomes hard to process, and large pieces remain.

Step 2: Stir-Frying the Rice

Heat two tablespoons of butter – it can also be ghee or coconut oil, depending on what you like the most – in a large non-stick pan over medium heat.

When the butter is melted, add 4-5 cups of riced cauliflower, stir-fry for 1 minute, then cover and keep cooking for 5-7  minutes until the keto cauliflower rice is tender but still firm and slightly yellow and grilled.

Just before removing from the heat, add a splash of lime juice to remove any cauliflower smell and to add a delicious zesty flavor to the rice. Another option is to add vegetable broth.

Season with salt and pepper or garlic powder if desired.

Serve as a side dish to any grilled meat, grilled fish, or Keto Curry Recipe.

Tasting and Adjusting

This keto cauliflower rice has a firm texture like rice. It does have a light cauliflower taste that is well covered by butter.

But, if you are not a fan of cauliflower, add even more flavor to your cauliflower rice by adding garlic, salt, coconut amino sauce, or cream!

How to get rid of the cauliflower smell?

If you are new to keto, cauliflower is your friend for many dishes. But, I hear you! The sulphur smell of cauliflower can be unappreciated by many.

The best way to cover the cauliflower smell is to add a few drops of white vinegar or lemon juice to the pan.

  • Trim the cauliflower head, remove the green leaves and the cauliflower feet. Discard them.

  • Cut the cauliflower into small florets.

  • Place 2 cups at a time of cauliflower florets in the food processor with the S blade attachment and process on high speed for 30 seconds until it resembles rice. Set aside in a bowl. If you don’t have a food processor, use a hand grater box.

  • Repeat the above process until all the cauliflower florets are turned into the rice. Measure 4 cups of cauliflower rice.

  • Heat and melt butter in a non-stick pan and stir in the 4 cups riced cauliflower.

  • Stir fry in butter for 1 minute, cover pan with a lid, and reduce to medium heat. Cook the rice for 5 minutes or until slightly golden grilled, still tender but cooked through.

  • Remove lid and keep cooking until the liquid evaporates and texture is to your liking.

  • Stir in a splash of lime juice or broth at the end of cooking if you like – just for flavor, keep cooking for 30 seconds to incorporate and evaporate the liquid, then serve hot or lukewarm as a side dish to any keto recipe.

  • Season before serving with salt and garlic powder if desired.

  • You can stir in an extra tablespoon of fresh butter or coconut oil before serving for an extra creamy texture.

It means that even without the pasta, a mac and cheese sauce is not keto-friendly and high in carbs. So to enjoy Mac and Cheese flavors on a keto diet, you must make your own sauce and choose a pasta low-carb carb alternative you love.

  • Head of cauliflower – cut into small florets 1 1/2 inches each and steamed. Cauliflower is a great keto-friendly vegetable.
  • Unsalted Butter – learn why Butter is a keto-friendly dairy product, unlike milk.
  • Softened cream cheese
  • Unsweetened Almond milk
  • Shredded sharp cheddar cheese 
  • Shredded Gruyere or Emmental – avoid hard grated mozzarella. This option makes the sauce too stringy!
  • Salt
  • Pepper
  • Garlic Powder
  • Paprika
  • Dijon mustard

Cut and steam cauliflower

First, place the cauliflower head on a chopping board and trim outside leaves. Next, cut the head into small florets, bite-size of about 1 1/2 inches each.

Finally, place the florets into a steamer basket over a large saucepan of boiled water. Steam the florets for about 8 minutes.

How to make Keto Cauliflower Mac And Cheese

You can also place the florets into a large mixing bowl and microwave for 6-8minutes until softer, not mushy. Set aside the cooked cauliflower for a few minutes or until they have steamed out.

Keto Meal Plan

Keto Mac and Cheese sauce

Meanwhile, in a saucepan, melt butter, then add almond milk, and bring to a light boil. Then, whisk in softened cream cheese, Dijon mustard, garlic powder, paprika, salt, and pepper.

When the mixture is smooth, stir in 1 cup of each variety of shredded cheese. Keep cooking until the sauce is creamy and cheese is melted.

Finally, stir in the cooked cauliflower florets into the sauce and keep cooking for a few minutes until the cauliflower is well coated and flavored by the sauce.

Casserole option

To turn this Keto Mac and Cheese Cauliflower recipe into a casserole, place the cheesy cauliflower florets onto a large 9×13-inch baking dish.

Sprinkle extra 1 cup cheese on top of the casserole with 1/2 cup bacon bits and bake for 10 minutes or until the cheese is melted and grilled.

Freezing

  • Trim the cauliflower stems, remove the leaves, then break into small bite-size florets about 1 1/2 inches wide.

  • Place the florets into a steamer basket and steam for 8 minutes until fork tender.

  • Cool down on a colander for few minutes until completely steamed out, then transfer to a large baking dish and spread into an even single layer.

  • Meanwhile, prepare the mac and cheese sauce.

  • In a large saucepan – large enough to fit the cauliflower florets – add the butter and almond milk and bring to a light boil, then whisk in cubes of softened cream cheese, Dijon mustard, garlic powder, paprika, salt, and pepper.

  • When the mixture is smooth, stir in shredded cheddar and shredded gruyere.

  • Stir over low heat for 1 or 2 minutes or until the cheese just has melted and a creamy sauce forms. If too thick or stringy, add more almond milk at room temperature until it reaches your liking.

  • Stir the cooked cauliflower florets into the sauce and keep cooking for 1-3 minutes until hot.

  • For a casserole, transfer into a 9×13-inch baking dish, sprinkle extra shredded cheese on top, and bake at 180°C (350°F) for 15 minutes or until cheese is broiled on top.

  • Serve immediately with fresh herb or plain.

Keto Iced Gingerbread Loaf Recipe

There are some flavors that go hand-in-hand with the holiday season, and gingerbread is one of them.

And gingerbread is one of those flavors that bring back memories of winter holidays when I was growing up. 

So, of course, I’m going to create a Keto version of one of my favorite childhood treats! And I’m happy to announce that it tastes just as good (if not better) than the gingerbread loaves that my mother used to make.

Even better, each thick slice is just 3 g net carbs, which means you can completely indulge over the holidays without any guilt.

Recipe Baking Tips and Suggestions

My Keto Iced Gingerbread Loaf is super easy to make. However, if you are new to Keto baking, it might look a bit intimidating, and I understand that!

So, here are a few baking tips to make sure your gingerbread loaf comes out perfectly. 

Be sure to sift your coconut flour before measuring. Coconut flour has a tendency to form hard lumps, which you don’t want in your baked goods. 

For the most accurate measurements, be sure to weigh your almond flour and coconut flour with a food scale instead of using measuring cups.

However, if you don’t have a food scale, use a spoon to scoop the flours into your measuring cup. 

Make sure your ghee and eggs are room temperature before using them. Typically, I take both out of my refrigerator about an hour before I start baking to let them get to room temperature.

And for a dairy-free loaf, you can use coconut oil instead of ghee. I would suggest using refined coconut oil instead of unrefined (also known as virgin) coconut oil because it has a much more mild taste.

After you bake the loaf, be sure to let it cool completely in the pan before slicing it. If you slice the loaf while it’s still warm, it’ll likely have a mushy texture.

And you can absolutely skip the icing for a less sweet loaf, but it really makes it into a decadent dessert loaf.

  1. Preheat the oven to 350 F (175 C). Line a small loaf pan with parchment paper and set aside.
  2. Place all of the loaf ingredients in a large bowl and mix until completely combined to create a smooth batter. Pour the batter into the prepared loaf pan.
  3. Place the loaf pan in the oven and bake for 40 minutes until cooked through and a toothpick inserted into the center comes out clean.
  4. Remove from the oven and let cool completely before removing the loaf from the pan.
  5. To make the icing, combine the powdered erythritol with the water until smooth. Cover the top of the cooled loaf with the icing before slicing and serving.
  6. Refrigerate the iced gingerbread loaf in a sealed container for 2 to 3 days.

Keto “Sweet Potato” Casserole

Have you tried keto sweet potato casserole yet? This is, most people are used to Keto pizza casserole or keto chicken casserole but have not yet tried keto “sweet potato” casserole.

Keto “Sweet Potato” Casserole

On a Keto diet, you don’t have to give up your favourite holiday foods, as this Keto Sweet Potato Casserole demonstrates.

You’ll get all of the flavour of your favourite sweet potato casserole without any of the calories or carbohydrates.

Even better, all of the ingredients can be found in most supermarkets and internet merchants. As a result, you won’t have to worry about spending a fortune on difficult-to-find ingredients.

Did I mention that this dish would appeal to your non-Keto relatives as well?

How I Made This Keto

Because of their relatively high net carb content, sweet potatoes aren’t Keto. So, in order to obtain the sweet potato flavour without the carbohydrates, I had to be a bit creative, and I’m happy with the results.

As a sweet potato alternative, I used a combination of butternut squash and cauliflower, and the combination is delicious.

If you have the time, roast the butternut squash instead of steaming it for a more flavorful result. Simply toss them in a little avocado oil and roast them for 30 to 35 minutes at 400 degrees F (200 degrees C) until cooked.

Then, to help sweeten the meal, I added granulated erythritol to give the butternut squash and cauliflower a sweeter taste comparable to sweet potatoes. Of course, you may alter the sweetness to suit your preferences.

I used unsweetened almond milk to help mix the sweet potatoes and cauliflower to keep the dish dairy-free. Almond milk can be substituted with unsweetened coconut milk.

Without the crispy pecan topping, no sweet potato casserole is complete!

To give the meal a typical Christmas taste, I used a mixture of chopped pecans, granulated erythritol, and a blend of cinnamon and nutmeg. If you don’t have nutmeg on hand, you may omit it or use pumpkin pie spice.

Made with butternut squash and cauliflower and topped with a cinnamon pecan topping, this holiday “sweet potato” casserole is delicious! Just and see.


Ingredients

  • 2 ½ cups (12 oz or 350 g) diced butternut squash
  • 1/2 head cauliflower (11 oz or 300 g), broken into small florets
  • 1/4 cup (48 g) granulated erythritol
  • 1 teaspoon (2 g) cinnamon powder
  • 1/2 teaspoon (1 g) ground nutmeg
  • 2 Tablespoons (30 ml) unsweetened almond milk (or more, if needed)
  • 1 teaspoon (5 ml) vanilla extract

For the pecan topping:

  • 1/4 cup (38 g) chopped pecans
  • 2 Tablespoons (24 g) granulated erythritol
  • 1/2 teaspoon (1 g) cinnamon powder
  • 1/2 teaspoon (1 g) ground nutmeg

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit (175 C). Set aside a medium-sized casserole dish that has been greased.
  2. Combine the chopped pecans, granulated erythritol, cinnamon, and nutmeg in a small bowl. Keep it aside until you’re ready to utilise it.
  3. In a large pan, combine the butternut squash and cauliflower with 1/2 inch (1.25 cm) of water. Bring the water to a boil, then cover and steam the veggies for 10 to 15 minutes, or until they are soft. Drain thoroughly. (Alternatively, steam the veggies in a microwave or Instant Pot.)
  4. In a food processor or blender, mix the steamed veggies, granulated erythritol, cinnamon, nutmeg, almond milk, and vanilla extract until smooth. If the mixture is too thick, add 1 Tablespoon (15 ml) of almond milk at a time until the required consistency is attained. meal of the day!
